FRESH FARM
As part of our sustainability efforts, we have embraced a farm-to-table philosophy, using fresh, local ingredients sourced from small independent producers around the country and FRESH FARM, our own farm in Avlida in Central Greece where we produce extra virgin olive, olives and seasonal vegetables and fruits.
At FRESH FARM we practice biodynamics, a form of organic farming that aims to grow food ethically and sustainably. This means that we do everything by hand, from soil preparation, seed sowing and harvesting to weeding and composting. The farm is an integral part of our day-to-day operations, providing fresh, seasonal vegetables and fruits to our restaurant according to the biodynamic calendar. FRESH FARM is in the process of becoming bio-dynamically certified.
EXTRA VIRGIN OLIVE OIL
Our extra virgin olive oil boasts a deep, brilliant green colour with a fresh and peppery taste. It’s produced in early October from green, unripe olives grown in our own farm. To ensure superior quality, the olive oil is extracted within a few hours after harvest in the local press mill.
OLIVES
The renowned Kalamata olives are harvested by hand from olive trees grown on Fresh Farm, only after ripening. The natural debittering process takes several months. Kalamata olives have a soft texture and their taste is rich and fruity.
